Do you keep your CPU/GPU temps constantly showing in your task bar or do you only check the temps occasionally?

I only monitor if I find there is a problem. The only exception would be when I am testing an overclock to verify it's stable.

How do you know there is a problem if you don't monitor it constantly?

Let's say you only check ever other day, what if it's running really hot on the day you DON'T check?

Are there OTHER ways to tell your machine is running hot?

Usually there are signs such as the system freezing, random bluescreens, or artifacting.

I keep CoreTemp open all of the time, as well as EVGA Precision.
Then again, I'm running F@H on the quad-core as well as the GPU, so keeping track of temps is a must.

Once I have everything running the way I want, I don't usually worry too much about it.
Usually, for the first month after a new build, or after overclocking, then yes, I monitor during stress testing, but not during "normal" activities.

On my Windows box I have Speedfan running in the taskbar continuously, as well as having a sidebar gadget that displays temps. In Ubuntu, on the machines that support it, I keep my temps in the panel, as well as in Conky.

Same here. I run everything at stock and do initial tests of memory, CPU, temps.

Once I know nothing is defective on arrival and the temps are OK, I usually wait until there is some evidence of a problem before checking again.

Once I am all squared away and then gaming on it, I don't run any unnecessary overhead unless I sense something has changed.
