Cooking chicken without it getting dry?

I cook 3-4 chicken breasts in the crock pot at least once a week, sometimes twice if my son dips into my stash. With the crock pot, in general all cook levels (warm/low/high) end up at the same temp, it's just how long it takes to get there. I'm generally cooking from frozen, 6-7 hours on low or 4-5 hours on high in a chicken broth base. I have some in the crock pot right now in fact.

My goal is to make a "stringy mess" though, I use forks to shred it and make chicken and spinach/kale wraps with some sauce for flavor (bbq or buffalo sauce). I eat this at least 50% of my weekly meals, sometimes 75%, and I've lost 50 pounds since March 2018 and along with a heavy gym routine I have a 6 pack for the first time since I was a skinny teenager - I'm in my 50s now. Sure it's boring but even after a year, I'm not tired of it and it's simple and fast to make and going from 800 calories per meal to <300 makes a huge difference. And chicken breast is $1.90 per pound here so it's pretty inexpensive as well...the low carb tortilla costs as much as the chicken in every meal.

We just use a frying pan and straight coconut oil/spices. Now that spring is coming I might try doing some outdoors on the bbq sometime.

Careful cooking with coconut oil. It has a low smoke point and will burn pretty easily. Use medium-low heat.

I've recently started making chicken fingers in the oven. Cut breasts into strips, coat with flour/paprika mixture, then egg, then panko bread crumbs. Drizzle with olive oil and bake at like 450 for 14 minutes, flipping halfway through. Always tender and juicy.

I've found that chicken needs high heat if you're sauteing it, or you'll end up with rubber. For a while I cooked it on medium heat because anything higher would cause a ton of oil splatter all over my stove, but the chicken almost always came out as an inedible piece of rubber. Then I cranked up the heat to medium-high and it's perfect every time, though I do get a ton of oil splatter - it's worth it.

I find that whenever chicken breast comes out too dry, it's because I didn't use enough semen.

Or like ponyo said, just go with sous vide. works every time.

Yeah once it's browned you can just turn it on low heat and throw a lid on top of the pan and it seems to keep everything from drying out.

I usually cook boneless skinless chicken thighs to make chicken salad. 2 cups of water with some seasoning and about 15 - 17 mins in my Instant Pot.

Breasts usually take about 12 - 14 mins but I eat them they way they are rather than make chicken salad.
