Cooking steaks on the stove instead of BBQ....

I've always cooked steaks on the grill but I'm out of charcoal. I have 1"-1 1/2" thick New York Steaks. Do I just season the steak, coat the pan with oil, and do what I normally do on the grill?
 

Listen carefully. Do it only if you have a cast-iron skillet, as you'll need to transfer your steak to the oven.

Season steak with garlic powder (not too much!), Worcestershire, and pepper. Fork holes into meat.
Preheat oven to about 375.
Put about 1 tbsp of oil in the skillet. Turn it to medium/high heat (7 on my stove).
When it's hot, put the steak in the skillet. After 45 seconds, flip it.
After 45 seconds on the other side, put the steak in the oven. Cook for ~15/20 minutes on each side (depending on how done you want it).

This will produce the best steak you can make off the grill. The crispy crust on the outside of the steak is literally manna from the heavens.

if you use a thin cut, you can sear it on both sides and skip the oven. i like a skirt steak seared; great stuff.

buying charcoal is not an option cuzzzzzzzzzzzzzzzzzzzzzzzzzzzzzzz it's a saturday and i'm still in my pajamas. don't feel like going out to buy charcoal

15 to 20 minutes in the oven PER SIDE is way too long, 15 to 20 minutes total is too long. only do this if you want a steak well done and its a tough piece of steak like blade steak or shoulder steak.

For a decent piece of meat, you want the oven on broil or if you don't have that setting 500 degrees or whatever the highest your oven will go to.


and you do not want to poke holes in your meat. This will cause valuable juices to run out.

So it can absorb the seasonings/Worcestershire. My dad's always done it, and I've done it with great success.

make sure you frying pan does not have non stick coating and make sure it doesn't have plastic handle.

yes i do. kinda dirty though which is why i wanted to use aluminum foil.

yes you can. what you loose out on is the brown bits on the bottom of the pan that you can make in to a reduction sauce but if you don't care about that I think a preheated aluminum foil metal plate should work.

just transfer from pan to hot plate.

Buy a 12" Lodge cast iron skillet from Amazon. It'll last forever if you take care of it.

The difference between the two is that you'll have to season the unseasoned cast iron before you start cooking with it. It's not that difficult, though you'll have to decide how much $4 means to you.

How to season a cast iron pan

If you do buy one, you should cook acidic foods (tomatoes and the like) in your other cookware.

why a pan with non-stick coating?

Make sure it doesn't have a non-stick coating if you're putting it in the oven or searing with it. If you let it heat up too much it starts to give off slightly toxic fumes.
