I've always cooked steaks on the grill but I'm out of charcoal. I have 1"-1 1/2" thick New York Steaks. Do I just season the steak, coat the pan with oil, and do what I normally do on the grill?

Fork holes into meat? Why?Originally posted by: jumpr
Listen carefully. Do it only if you have a cast-iron skillet, as you'll need to transfer your steak to the oven.
Season steak with garlic powder (not too much!), Worcestershire, and pepper. Fork holes into meat.
Preheat oven to about 375.
Put about 1 tbsp of oil in the skillet. Turn it to medium/high heat (7 on my stove).
When it's hot, put the steak in the skillet. After 45 seconds, flip it.
After 45 seconds on the other side, put the steak in the oven. Cook for ~15/20 minutes on each side (depending on how done you want it).
This will produce the best steak you can make off the grill. The crispy crust on the outside of the steak is literally manna from the heavens.

So it can absorb the seasonings/Worcestershire. My dad's always done it, and I've done it with great success.Originally posted by: Howard

Buy a 12" Lodge cast iron skillet from Amazon. It'll last forever if you take care of it.Originally posted by: hongkongfever
