He is in custody so he can obviously be brought to court and how do you find someone guilty in their absence? Is that how the legal system works in the UK, fail to show up for your court date, even if it's the government who is preventing you from attending, and your automatically guilty of a crime?

Not for criminal offenses, they put a warrant for your arrest and depending on the crime they keep your ass in jail until your court date. The state can not prevent you from showing up to your court date/trial and find you guilty for not showing up, that is so unconstitutional it's not even funny. Do you have any idea how badly that would be abused and how much we would hear about it if it was possible?
