I'm confused, looking at peoples records on there I clearly see a bunch of k-1 fights. on Sapp's record there looks to be 9 for K-1

No, those were the only two rules when UFC started, and that's it. Everything else way legal. Later on after Tank Abbott fought they added an extra rule, no fish hooking. Along with... No Headbutts, Lowblows or Elbows, no punches to the back of the head and no throwing.
Because now it's a legitimate sport. Back then it was just a savage street fight that was just silly. The rule changes brought more people into the audience and has done wonders for the the sport. When I saw Cro Cops first fight in the UFC, everyone was so impressed. I saw it as his head being wide open. I predicted someone would take his head off with a punch, but he was wide open for a kick too I guess
