This is killing me. I've been planning to buy a Seasonic X850, but with the X750 for $100 less, I'm wondering if I'm nuts to pass on it.
Would I be OK with 750W for an overclocked 2600K, single GTX580, SSD, 2x Hard disk, 16GB RAM?

You won't even come close to the capacity of the x750. I have a system with a similar power profile and hit 410w while gaming (BF3). That's less than 2/3 of the capacity of my x650. You'd likely be fine doing 580SLI on the x750.
An overclocked 2600k is one of the most power efficient CPUs of all time. That setup will easily run on an Antec, PC Power & Cooling, Seasonic, Enermax, Corsair, Fortron 500-520W power supply.
