Deer meat

I was given about 30 lbs of venison hamburger meat. About 1/2 of it mixed with pork fat and the other half without. I used about 2 pounds to make meat sauce for the spaghetti and my family wouldn't eat it due to the slight gaminess of the meat. What and how can I use it to mask the gamey smell and taste so everyone can eat and enjoy it? Mix 1/2 with ground beef? Or use heavy garlic? Will using it in something like chili mask the smell and taste? Any ideas?

Give it to someone who appreciates deer meat for what it is. Don't try to mask it ... it won't turn out well.

Chili and stew meat is about the best you can do. Jerky is another as the seasoning will cut the gamey taste away. I grew up in a hunting household eating about anything you could shoot or trap and still not a big fan of deer meat...at least in large chunks like steak or roasts.

If I have deer, it's best in jerky, burger, snack stick, or summer sausage form.

Hey now... deer burger chili is good stuff.

It's also good with a white or red mushroom sauce over rice.

Soak it in salt water and a little vinegar a day before using.
It isn't that deer has that flavor it is that people have eaten processed meats so long they don't know what real meat actually taste like.

Might want to look up recipes for deer stew . I never heard of it being used in spaghetti.

I'm not saying it doesn't taste good. It's very rich in taste. I didn't mind the taste. It's different but perfectly edible to me. It's the Mrs. that won't eat it due to the smell and taste. To me it smells little like lamb. She's not a fan of lamb, goat, or duck.

I had deer jerky before in college and it was terrific. Some of the best jerky I had.

I heard you can marinate a cut like steak in milk and that will get rid of the smell. But I don't think I can do the same to hamburger meat since it will get all soggy. I might have to try it in some chili this weekend and if that fails, I will probably just have to give it away.

Will that work on hamburger meat? Won't the meat get all soggy? The reason I used it in spaghetti was that I made big container of homemade red sauce over the weekend. I used some of that to make quick meat sauce for spaghetti since I really didn't want to cook tonight. I ended up the only one eating it.

Nutmeg works well with Lamb, it might work for venison, but I dunno. I really like venison, makes an awesome meatloaf.

deer meat is an acquired taste. Its good but not good enough to replace beef.

but it makes amazing jerky and meat sticks

i've heard that marinading in milk will cut the gaminess significantly
as will sugar, water, and vinegar.

but, since yours is ground up - you're hosed.
make it into jerky.
