Do you like buttery steak?

I like buttery fish: fish dipped in pure butter before served

But I don't like it when the steak restaurant dips my $60 ribeye in butter before serving.

Butter flavored bife isn't my thing.

When you sear meat, it loses moisure and fat. These two components (a third being salt) are required to transmit the sensation of flavor to your taste buds. A fat is usually basted on the meat during the cooking process. You'll see this when roasting a turkey/chicken, chicken wings, pork chops, lamb chops, etc.

With steak, butter is a great choice because it infuses the flavor of herbs really well (usually rosemary and/or thyme), and will take on onion and garlic oils quickly. It also has a low smoke point, so it will reach a Maillard reaction very quickly in a hot pan. That nutty "brown butter" herb infused flavor is a signature of good steak houses (and good home cooks ) and usually very desireable.

In conclusion, you're weird.

Butter very little garlic and about a quarter cap of pica pepper. Separate pan very finely chopped jalapeno & habanero not pilled up, around the size of a quarter with butter. cook j&h until it loses some of its zing. you want the flavor not the heat. Add to other sauce. Lump crab meat if you want. I have had owners of very fine restaurants ask if they can use this.
Even if you don't want a sauce on your stake basting with a little butter will help keep the sear from drying out to much.

I disagree. Butter brings out the flavor in steaks. If you add ketchup or BBQ sauce, you destroyed the steak. When people add sauces, it says the steak is bad to begin with. Adding salt pepper or other spices is perfectly fine.

I don't really have a firm opinion on this, I don't put butter on steaks I cook at home, and I don't order steak at restaurants. Unless it's chicken-fried steak, and obviously that comes with gravy, and isn't really "steak".

Err no, only thing that goes on my steak is salt and pepper.

Not necessarily. It's just a personal preference. In my opinion, butter can make a great steak into a sublime experience, and it can enhance a less than stellar cut as well. I think it's understood that you represent steak purity, but don't confuse your strong (elitist?) preference for someone else's food "sucking."

No, not at all. Salt and pepper... POSSIBLY a rubbed herb of some kind. (light!) Otherwise a thin coating of soy sauce.

I find my BEEF most times already has sufficient BEEF FAT ... no need to add more.

Most people soak their "icky" veggies in BEEF FAT and sodium too ... doesn't make it a good idea getting used to it.

Eh, don't need butter on my steak. If it's a good high quality cut, there's enough marbling that butter is unnecessary

I remember an old recipe that's so simple, and I still do it once in a while. Sear a steak both sides in a skillet, remove and pour into the hot skillet maybe 1-2 tablespoons of whiskey, work it around what's in there and pour it over your plattered steak. Actually tastes pretty great.

I'm sorry, but after I work 1-2 tablespoons of whiskey around my mouth, why would I want to pour that over my steak?

gordon ramsay food is delicious but OVERPRICED!
the only time i eat there is when it's free.
(ie: a corporation is paying the tab)
