If you read my post again, you'll see I didn't make any blanket statements about them being bad for you. I only pointed out that they can be a migraine trigger for some people, myself included. I kept track for awhile and realized that most of my migraines occurred shortly after eating bacon, hot dogs, or other cured meats. Now that I stay away from cured meats and red wine, my frequency of migraines has gone way down.

The only point was that if you are avoiding nitrates/nitrites for whatever reason, the "uncured" or "No nitrites added" substitutes are a scam.

Can you eat collard greens, carrots, celery, beets, and random root vegetables? Because if you can, its not the nitrates.

well, that was true until costco switched to pepsi and got rid of iced tea. but costco still has brown mustard and chopped onion.

Unless Sam's has change, as it's been years since I ate there they have Chili though.

Is it the nitrate/ites in those cured meats, or the salt content in those cured meats --> dehydration that leads to migraines?

I'm just curious, though I know that migraines are, biochemically, a very different animal that the typical headache, and are often triggered by very specific stimula. It wouldnt' surprise me that dehydration has nothing to do with them.

The only "cured" meat I usually eat is prosciutto. And I've never had a migraine after eating it. Ingredients: Pork, Salt (lots of it)

So it seems unlikely to be due to the salt.

I don't claim to be an expert. From the research I've done in trying to reduce my migraines, I've found very little of what I would consider scientific proof. Just lots of anecdotal evidence. But from my own experience, I've proven to myself that I'm much more likely to have a migraine when eating meats with added sodium nitrite.

I don't eat collard greens or beets. I rarely eat celery, unless it's in a soup. I do eat yams and potatoes and haven't found any correlation with migraines.

But the fact is that neither you nor I have the expertise or scientific research to be able to say for a fact that if someone eats celery and and doesn't get a migraine, then hot dogs and bacon will be fine as well. Hot dogs and bacon have sodium nitrite, not nitrates. Yes, nitrates are converted to nitrites, but again, neither of us have the knowledge to say for sure that everyone reacts to ingesting both forms in the same way.

But to get back on topic, if I want to put Ketchup on my freshly made bratwurst (with no preservatives or curing of any sort), I will.

I'd say shit no, but so many people eat crap dogs where it doesn't matter for shit what they put on it. I'd wager money if they were eating a Sabrett dog they wouldn't want to put ketchup on it. It's mind blowing how hard it is to find a Sabret in California, the best dogs ever and they don't even fucking sell them anywhere unless you're in NY.

I think I've seen them at Sprouts.
Google also says Sprouts sells them.

I like the low fat/fat free hebrew nationals, since they're sometimes on sale, and less fatty and still taste good.

Nitrates are a known migraine trigger, I am sensitive to them as well. Im not seriously sensitive, but if i eat too much i get some major pain coming my way.

I love how these so called purists rail against ketchup, but advocate nuclear green relish, yellow mustard, sauerkraut, and all sorts of things that just as easily overwhelm the flavor of a dog. Jeez, live and let live.

I had ketchup on my hot dog last night :thumbsup:

idg people who like mustard... if there's mustard on my dog or burger, that's all I can taste.

loading your hotdog up with mustard relish sauerkraut drowns out the flavor too. it's no better than ketchup. i will take a moment however to express my distaste for the overwhelmingly sweet ketchup that's so prevalent nowadays. everywhere you go it's all the same heinz crap. all you can taste is the syrup. what happened to tangy ketchup where you can taste the tomato flavor?

I use this in place of ketchup, because ketchup is too sweet:

I enjoy ketchup and mayo on a hotdog but if lakedude, who is from Illinois, sees me in the breakroom with it he starts talking about how a hotdog should have mustard on it.
