Actually one or two of the items on the list will create demand. This is assuming your place is reasonably clean and the food tastes at least as good as fast food.

not necessarily enough demand to exceed costs. lots of fantastic restaurants die for that exact reason.

They were most likely out classed by a near by restaurant or there were too many similar restaurants near by.

I've been to Whole Foods that were on the border of very shady areas and they do great business.

It could also be that some tastes are very regional and no one outside that region likes it, like that Italian maggot cheese that is actually illegal to sell even in Italy but people from that town get sick every year from eating it.

almost assuredly, but they still met the criteria on your list

one example off the top of my head) a top tier pho joint in a terrible location. price was cheap, but location was terrible (back corner of a strip mall) and way too many competitors nearby with even lower prices.

they got a lot of press from everywhere, but alas the demand from those of us that were willing to drive to get the best of the best was not enough to keep them afloat, given that the neighborhood demanded nothing else but cheap and convenient.

and yet with reference to the chicago dog, you're eating a hot dog with a bunch of shit on it (in an attempt to improve the base hot dog) instead of a hot dog straight up.

It's not that Chicago Dogs are wrong. It's that all hot dogs are right.

By the way, where is that place w/ the sign you posted? If I'm ever there, I'll have 1 of everything.

dunno actually, I only know them cuz they got a truck in LA and my BC expat friends go apeshit over the joint.

i only use premium organic ketchup with grain fed all beef hotdogs on gluten free bread on bpa free plates while taking shots of my premium flavored ciroc vodka.

I love the organic dogs with Heinz ketchup and mayo, delicious.
I'm going to have to go with the Republicans on this one, Reagan said Ketchup was a vegetable and Nixon liked ketchup on his eggs.

Problem is, most hot dogs are just shit.

I like the Oscar Mayer Selects, all beef and no nitrates or nitrites. Oh, you can put a line of mustard on them, maybe even some sweet relish, but these dogs are good enough you can eat them plain in the bun. Nom nom nom. Also, they are pretty much available everywhere, as opposed to the people hyping up their local butcher's hot dogs that no one else in the world will ever get to try.

Just so you know, those are full of nitrates. They just add them in the form of celery powder or celery juice. Not that nitrates are necessarily bad for everyone. But they seem to be a migraine trigger for me.

well, that was true until costco switched to pepsi and got rid of iced tea. but costco still has brown mustard and chopped onion.
I prefer bratwurst over polish dogs. It's the spice combination and I'm not a huge fan of the smoke flavor they put in them.

Definitely brown mustard > yellow..... My local Samsclub has brown mustard packets and kraut.

I don't have a Costco locally, so I don't get to try them out.

Sodium Nitrate really hasn't been given a definitive link to health issues, and even if it did, its use in meats is tiny compared to other sources, such as leafy green veggies, beets, cabbage, etc etc etc.

So yeah, if you think sodium nitrates are bad for you, stop eating most vegetables.

Uh, sodium nitrites are bad for you, and they're made that way by cooking nitrates. I don't let it near my boys, although adults can handle high levels of it easier. While the preservatives may be a tiny amount per serving, that's somewhat mitigated by our out of control portion sizes and focus on animal protein in the American diet. Obesity what?

Not an issue if you eat organic, or simply veg that hasn't been drowned in Miracle Gro, etc. I've never seen anyone pound down bushels of salad as a feat of strength or because they were hungry. In fact, most of a humans nitrate intake come from leafy greens and other root vegetables. Nitrates/Nitrates in processed foods is just celery juice, celery is LOADED with nitrate/nitrites.

Thirdly, nitrtes/nitrites actually being bad for you is extremely contested. There was evidence of a possible link in an experiment, however that experiment didn't actually enact a control group. However, otherwise, there is very little actual evidence that indicates that nitrates/nitrites are bad for you.

If you read my post again, you'll see I didn't make any blanket statements about them being bad for you. I only pointed out that they can be a migraine trigger for some people, myself included. I kept track for awhile and realized that most of my migraines occurred shortly after eating bacon, hot dogs, or other cured meats. Now that I stay away from cured meats and red wine, my frequency of migraines has gone way down.

The only point was that if you are avoiding nitrates/nitrites for whatever reason, the "uncured" or "No nitrites added" substitutes are a scam.

Is it the nitrate/ites in those cured meats, or the salt content in those cured meats --> dehydration that leads to migraines?

I'm just curious, though I know that migraines are, biochemically, a very different animal that the typical headache, and are often triggered by very specific stimula. It wouldnt' surprise me that dehydration has nothing to do with them.
