I have a related question. My wife hates added sugar and really hates vinegar. But, we have need for a hot sauce with about the same level of heat as Tobasco or Sriacha. Tobasco is mostly vinegar, Sriacha is mostly sugar. I see that the Tapatio has neither. Is it good, or are there other non-sugar non-vinegar ones that you'd recommend?
We rely heavilly on our homegrown cayenne peppers, but those are so variable in heat that I want a sauce that is more consistent.
