Well, it really depends on how much time you want to spend. There are lots of things to see/do along the I-95 corridor. I have an uncle that lives near Miami, so I've been up and down the stretch a few times.
In Florida, you have the space coast. The Space Center is a nice place to visit if you've never been there, but it really takes several hours, so if you are just looking for places to stop, not a good idea. Plus it will only be 3 hours into your trip. However, if you've never been there and likely won't have the opportunity, it is a nice place to stop.
Further north you have St. Augustine, and just into Georgia you have Savannah. Both are beautiful cities and nice places to stop.
Charleston, SC is also a real nice town. My brother did his stint in the navy stationed there. It is only about a 30-45 minute drive off of I-95 to get there.
Other than that, there is not a whole lot up the I-95 corridor, except for a long stretch of beaches. You could stop along the outer banks, or any number of places, if you wanted to stop and get your feet wet.
Once you hit Richmond, VA, you will start hating life. The last stretch of I-95 is brutal. Of course, you could divert onto US 301 just north of Richmond. There is a toll bridge over the Potomac, but the scenery is much nicer, and the traffic will be a lot less. You can head across the Bay Bridge (though another toll) and head up through Deleware and then make a stop in AC to drop some coins into the slots before the home stretch.
There is lots to see along the I-95 corridor. It's just a matter of how much time you want to spend seeing it.
