I use the DS4 and have built several systems using all of the gigabyte P35/G33/P31/G31 motherboards and they all perform very well. If theres a difference in performance in the boards you list it would be so small you would need a benchmark program to tell the difference so like DarkRouge suggests, it boils down to features!
I use the DS4 because I wanted the 9R southbridge chipset for raid, and needed several internal usb headers as well as firewire, so it worked great for my needs. Additionally, I have the rear esata hooked up along with a drive caddy in my tower for retrieving data from broken systems, to put on the new ones I build for them. Having lots of sata headers worked great for me. Has been a great board running my quad 6600 at 3.3 and now a Q9300 so far at 3.0 because I havent taken the time to play with it much.
