I used to use the same setup actually, up until about 6-8 weeks ago in fact! I did a few with DVD Shrink "only", but then I switched back to using DVD Decrypter to dump all of the movies I want to do for a day onto a drive. Then I'll go back and use the Open File option in DVD Shrink. I know it's an extra step, I just feel DVD Decrypter is such a stable and versatile app, I'd rather deal with the more advanced stuff like re-encoding/authoring with data that's already on a hard disk...
I seriously am/was just like you until a few months ago. Now I've replaced DVD2One with DVD Shrink and I don't intend on going back. You should give it a try...
[EDIT]Like you, quality was my biggest concern, and while using 3.0beta, they look just fine (depending on what I choose to keep of course). And you can't beat the price so you might as well try it out!
