I used a covops as a hauler for months. A prowler and most recons are good alternatives with large cargo bays.
Problem is, you will be ganked sooner or later no matter what you fly if you use gates. It's not a matter of if, it's a matter of when. At some point you'll blunder into a really large, organized camp that *just* set up on the pipe with an inty pilot experienced at decloaking people. Or forget to set an off-axis bookmark in a 2 gate system with no off-axis celestial objects. Or jump in within decloak range of an enemy drone. It's unlikely, but will happen at some point.
Inties aren't all that for 0.0 hauling. Problem with them: a better inty can catch you.
So the only reliable and safe way to do 0.0 logistics is ships with jump drives, alt scouts, cyno alts and a bit of a brain. It helps if the intermediate points and destination are full of blues.
Woops, missed the lowsec part. For lowsec anything with a covops cloak is safe enough. I prefer a blockade runner or recon -- they can survive a smartbombing BS where a covops may not. A cloak, MWD, and rig & fit for agility and speed not cargo capacity, look at pilots in space counts and you should be more than OK.
