What I HATE about it is that they usually make it a two parter: cut off thin slices of meat and skin to let you make wraps, then take the rest of the duck back to the kitchen, strip the meat and stir-fry it. The second part is usually shit. Just fillet the bird and give me the juicy clean meat.

Done right, most of the meat is sliced off and the stir fry bone is awesome (or option for soup). That's two full dish for two person for thirty something bucks is darn good.

I've seen the second dish come as another wrap and just as a regular stir-fry. They usually cut the meat into small bits. One place used lettuce as the wrap/shell.

Real peking duck are air blown and does take hours to prepare. Rest are just roasted duck prepare regular way.

And real one you use the pan cakes, not the bun.

I made reservation for real HK peking duck in nov for my trip..

Roast goose is awesome. Less fatty and the meat is firmer.

The only reason you need 24 hour notice is because you're going to a restaurant that normally does not serve a significant quantity during the night. A place that serves them regularly will have them prepped to go.

Go to a Peking duck place in Beijing (e.g. Siji Minfu). Guarantee it will be the best, and they'll have it ready for you at moment's notice.

Best Peking duck in the world is at R&G Lounge in SF - and because they serve so many of them a day, you don't have to order 24 hours in advance. They do run out if there are a lot of people eat the duck for the day.

As for using the thin buns or "pancakes", it's preference, because they're made from the same shit. I prefer the buns.

cheap (and delicious) roast duck:

expensive (and delicious) peking duck (2 common preps, one with pancake and the other with buns). The below pics aren't even that good, the REALLY good places will pull the skin off the meat and scrape off the fat.

Mrs. Sssnail and I have no problem finishing a duck with the very thin buns served at R & G Lounge. The pancakes has different texture, and I don't like it.
