Quite a few people in the Financial markets enjoyed Eyefinity since you could daisy-chain the displays, making that multiple monitor set-up a lot cleaner. Aside from that, simulators, and graphic design that requires multiple displays, I see no reason for setting up Eyefinity.

For 2D applications or 3D applications that use a windowed multiple document interface, Eyefinity doesn't really get you anything that normal Windows multi-monitor doesn't though. It's just hiding the extra monitors from the OS and presenting them as a single large surface at the driver level.
