Pancetta? When it's that thick, you call it pork belly. And pork belly on a burger (in lieu of bacon) is delicious. Just had one at the Grove Park Inn in Asheville this Labor Day weekend.
no it's not. pancetta is pancetta. I eat it as thick as I want. I cure it myself and cut it or purchase it as thick as I want. This is how you get it in Italy. It's not diced into useless stupid pieces. It should
never be sliced thin like those fucktards at "Boars Head" try to market it. savagery. that's all it is. pure, unmitigated savagery, those who would encounter pancetta less than .5inch thick!
It is far more typical to see pancetta sliced thicker than any kind of "thick bacon" and when you are requesting it from the butcher, you should request it in large, single portions, such that it can be separated from it's fat, with remaining thick slices of meat. The fat is thus rendered to prime your mirpoix, and the meat seared and crispy to complement the sauce that you are making.
