I've previously posted this in a couple of threads about bread makers.
This recipe deserves it's own thread.

OK! Here is the recipe for a two pound loaf that all who try it state that it is the best of the best!
I CAN MAKE THIS FOR $.13/LOAF! (So don't try and say this isn't a Hot Deal.)
This is our favorite bread recipe for several years running. It never gets tiring.
I made a loaf last night and it is over half gone. About a whole nickel?s worth.

Simple, too! Ingredients listed in order... T. = Tablespoon t. = teaspoon - all measurements are level.

2 - T. dark brown sugar ? packed (I am always generous with the sugar...I can control the rise with salt.)

1½ to 1¾ - T. high quality Olive oil (Aw, heck, just use two Tablespoons, Olive oil is good for you.)

12 - oz. filtered water* (I use Britta) * Microwave the water for 90 seconds and use it to rinse the oil from the Tablespoon as they are both added to the pan. I start with room-temp water.

1½ to 1¾- t. salt (Salt is pretty much the key to consistency as far as how much the loaf will rise.)

1 - cup Whole wheat flour (I prefer stone-ground, but commercial is probably just as good.)

3 - cups enriched white flour (not necessary to use the more expensive "bread" flour.)

1¾ - t. dry yeast (I get it from Sam's or Costco in the 2-lb. size and refrigerate it for year(s)) Might also be possible to use the yeast packets but they'd be more expensive.

Press the standard (default) bake button and let 'er rip.

1. Note ? on my machine (an Oster model 5821), it is necessary to scrape the small clumps of flour from the sides of the pan about 3 - 4 minutes into the start of the first mix cycle.
2. Note ? for a softer crust, this loaf must sit undisturbed (in the machine) for about a three hour cool-down after the normal finish of the baking and cool-down cycle of the machine. I've even left it for several hours (like 'till you get home from work or overnight).
3. Note ? this makes the world's best toast.
4. Note ? please don't use margarine on this bread/toast - use Land 'O Lakes butter, or it's equivalent.
(The hydrogenated oils used in margarine are poison!)

I call this my whole-wheat-light bread recipe and by default, it uses the normal white-bread bake cycle.

I never thought that a simple change in the process could make such a difference!
But, the Breadman Ultimate made this recipe into a whole new level of "Ultimate" Bread!

Might also try this variation on the TR4000
15 - oz. filtered water* (instead of the 14 - oz.).
2 - cups Whole Wheat flour (instead of the 1-½ cups).

Yummy, homemade bread!!

I remember when I was a young lad of around 5 and used to spend time with my Grandma at the farm quite a bit. I loved her apple pie and my cousin loved her home made bread.

Well, one week-end we were both staying with her (my cousin lived about 400 miles away so this was the first time we were both there together). He was a year older and she asked him if he wanted homemade apple pie or homemade bread. Of course, he wanted the homemade bread. Then she asked me what I wanted.

I paused for a second and told her, "Both."

I can still hear her laughing when I think back on it.

My standard Birthday and Fathers Day present is a double batch of homemade bread. Hand kneaded, now that's homemade!! I have yet to see a machine that can make it that good!!

I'll have to see if I can talk the wife into trying this receipe for Christmas. Thanks.

I still have and use our DAK bread machine, anybody else have something older? Mine is the II model.

My mom has one of those, makes the wierd tube shaped loaves! Man I really miss those DAK catalogs, they always had the coolest stuff in them! Too bad they went out of business.

Glad you could come to the party. It will be hard to resist not tearing into the loaf as soon as it dings that it is done. Better to let it sit in the machine overnight and go for toast in the AM.
I hope you do not have one of those bread machines with the fan that comes on to speed up the cooling of the loaf, if so, pull it out at the end of the cycle, wrap it & bag it - air tight. You'll see.
What do you think, fresh bread at 1AM?

2. Place pan in mixer.
3. Press start.
Easy as 1 - 2 - 3.

Don't ask me about oven baked bread. Ask your mom! I've never done it, just been on the receiving end countless times.
