The new 2½ lb. recipe is now included in the OP.

it's a 1/2 pound more. you added a little bit more water and 1/2 cup more wheat flour.

How did this little change bring the loaf to a whole new ultimate level???
Try it and see. Everything he said about the original recipe was true. It's now our family's favorite bread recipe. I have no reason to doubt what he is saying now.

For anyone wanting whole-wheat bread - and - has a "Cash & Carry" store near by.

I went to Cash & Carry in tacoma wa last night, and they have 50lb bags of whole wheat for ~$13.
They didn't carry it the previous time I was there -- so ymmv.

Bump for bread!

I actually tried the cake recipe that was in the book that came with my bread maker..

It almost came out a little hard and dry.. so I'll have to work on that a few more times

This was topped for passover. I was expecting Valentine's Day bread this time. Throw in some rose petals, and voila.

Me too! I am glad this thread resurfaced, I managed to miss it before
I'd recommend a 2lb machine.

Mine is a 1.5lb and the loaves are too small.

amazon has a sunbeam 5891 2lb machine on sale for $32.88 shipped free.
it's not the one i have -- so no personal experience -- but it's rated 4/5 stars with amazon customers. It looks like the one i've seen at walmart for ~$40.

Or, do like i did and try your luck at the goodwill/second-hand-store/craigslist and maybe get one for around $10 ymmv. the one I found looked like it was used once (near new)

I picked up a west bend 41073 last night for $7 at good will, it seems fine to me. I am going to give the bread a shot tonight.

Nat

Darn, its a 1 & 1/2 pound bread maker, I'll have to change the recipe. That's a bummer, because it looks simple as is.

Did my first loaf on Sunday. Turned out pretty well except I think I used some very old flour that I had sitting around. The bread has a bit of a musty taste to it. The bread itself has a great texture and is dense yet soft. Just need to get rid of the musty taste and I'll have it.

I'm using a Zojirushi that my inlaws don't use and followed the 2lbs loaf recipe.

I actually nailed it the third time, awesome toast!

My parents gave me an older Panasonic model which looks like a premium bread maker, that'll be my next experiment.

I bookmarked this recipe long ago, and finally tried it over the weekend.

I did mix things up slightly. Swapped the proportions of white flour and stone ground wheat, in my case. Also added 1/4 cup flaxseed meal.

Delicious.

It's not often you find a deal that stays hot for over a year... Thanks, OP. I just ordered a bread maker today because of you.

My dad has just been put on a strict low sodium diet due to congestive heart failure. Since it is near impossible to buy low sodium bread, he dragged his ancient bread machine [IIRC, Welbuilt] down from the attic, & the ancient paddle promptly died during the 1st kneading.

So time for a new bread machine & new recipes that are very low in sodium.

Anyone know of a good deal on a machine & more importantly, has anyone found a recipe that will make a decent loaf low in salt?

Thanks

It is my understanding that these (Zojirushi) are among the best if not the...

Edited to say: The freshness of the ingredients are among the important aspects of this recipe.

Always store "whole grain" stuff (like whole wheat flower and brown rice) in the freezer because they go rancid fairly quickly.

Similarly, yeast should always be stored in the fridge. It'll die if held at room temperature for very long.

if I wanted to use bread flour would i use the same amount as specified in the recipe 3 cups (replacing the all purpose) from what I gather the bread flour has more gluten in it correct.

How would one make this bread gluten free? My fiance is sensitive to gluten.

There are several gluten free bread machine bread recipes online. Can't swear to them as I haven't tried them:
