Costco or Sam's will have better prices on flour and bulk yeast.
However, you may need to buy 25lbs of the white stuff.

Salt is part of the balancing act between taste, rise and the sugar (which causes the rise as the fungi digest the fermentable sugars)
BTW, 86° to 96° Fahrenheit is perfect range of temp for yeast. Reason I mention this is that this (temperature) is critical in regards to rise of the product.
Perfect balance equates to perfect results.

(We won't get into the questions about ambient elevation which can make an amazing difference. Suffice it to say, the higher the elevation, the less yeast is needed. We are talking about increments of thousands of feet.)

Got my third loaf cooking now and I have a great meatloaf recipe to supplement it! You can use the 11-cent loaf both in the meatloaf and for making meatloaf sandwiches. Here's the recipe...

The Best Meatloaf Evar:

A delicious, easy meatloaf that is great for dinners and sandwiches. Freezes well and makes 6 to 8 servings. Great with the 11-cent-loaf Wheat Bread recipe!

Ingredients:
3 Slices of soft bread (white or wheat)
1 Cup V8 Tomato Juice (regular Tomato Juice works in a pinch)
1 Slightly beaten egg
1-1/4 Teaspoon salt
1/4 Cup minced onions (use 1 tablespoon dry onions in a pinch)
1 Tablespoon Worchestshire sauce
1-1/2 pounds Lean Ground Beef

Tools:
Cutting board & knife (for onion)
Small bowl and fork or whisk (for egg)
Large Mixing Bowl
9" bread loaf pan

Directions:
1. Pre-heat oven to 350 degrees
2. Tear bread into small pieces and remove any hard crust pieces
3. Mix everything but the beef in a bowl with your hands
* The goal is to get the bread to soak up the other ingredients
4. Mix the beef in with your hands
5. Put mix into 9" bread loaf pan and pat down
6. Bake for 1 hour at 350 degrees (no red in the middle = done)
7. Remove and let cool for a bit (15 minutes or so). The easiest way to remove the loaf is to use two pancake turners on each end to gently lift it out. This both drains the juice (discard) and lets you put it on a plate or platter to slice easily. The cooler the loaf is, the less it will fall apart (i.e. let is sit for 30 minutes and it will come out as a loaf and not be crumbly).

Notes:
1. Makes 6 to 8 servings (cut in slices about 3/4)
2. Makes a great sandwich with bread, lettuce, mayo, pickles, whatever you like, just like a burger. Cut one piece in half and put on a sandwich (wheat bread tastes great). My favorite is wheat bread, extra mayo, light mustard, and sliced pickles - one sandwich fills me up!
3. Freeze by allowing to cool, then slicing. Wrap each slice in Press-N-Seal and then put all the pieces in a Ziploc bag. To reheat, unwrap and microwave for 1 minute at 50% (dinner plate setting). Stores for up to 8 weeks (2 months).

I have tried doing everything but the beef in my blender, but you don't get any nice food chunks in your meatloaf since it's pureed, so I 100% recommend mixing everything by hand. The whole recipe only takes about 5 minutes to make (mince onion, beat egg, mush together by hand, mix in beef) and then a hour to cook, so it's very, very easy to do. If you make a bunch at a time you can just freeze it and use it for a couple months and that will make a nice, fast lunch or dinner. Plus you can use it with the 11-cent loaf for really cheap bread!

I changed the recipe slightly and it came out better, even my wife likes it now:

3 Tablespoons Brown Sugar
2 Teaspoons Kosher Salt

The toast is perfect! I'm a big fan of honey wheat, so I'm probably going to experiment with that next. Props to RideFree for this great recipe!

4 Tablespoons of Dark Brown Sugar is too much, the bottom of my loaf was wet and the loaf itself was kind of tough and spongy. 3 Tablespoons (packed) gives the best flavor so far.

Also this bread makes THE best pirate eyes I've ever had! And if you cut a thick slice you can do 2 eggs instead of 1 in the middle!

Ooh and I found out what the lids I was looking for were called..."Gamma Lids". If you buy flour in the big 5-gallon pails you can use a Gamma Lid instead of a press-fit lid + opening tool on the top, so you can easily access the pail using your hands. Here's an example of what they look like:

My wife invented a new breakfast food called "Jack Sparrow" - it's basically a double pirate eye. You'll need a thick slice of 11-cent bread, two eggs, butter, salt, and pepper:

1. Butter both sides of a thick slice of bread
2. Use a cup to cut a hole in the middle of the bread
3. Toss on a fry pan along with the circle piece, just above Medium heat
4. Crack an egg into the hole (don't forget to butter the pan or use Pam first!!)
5. Add salt, pepper (Kosher salt & freshly-ground black pepper work the best)
6. Flip when the first side is cooked (check the circle piece to see if it's brown)
7. Remove after second side is lightly cooked (so the egg is still runny)

Enjoy your Jack Sparrow!

It slices the bread (day-old is really good because it's stiffer) perfectly and also does meats, cheese, fruits, veggies, etc. You can buy small turkey breasts (about 1 pound) for $5 - $10, cook it up in 30 minutes, and then slice with this - I'm enjoying a freshly-cooked turkey sandwich on fresh 11-cent bread at this very moment.

My daily bread system is nailed down now. Here's the recipe I use:

3T packed dark brown sugar
2T olive oil
12oz warm filtered water * (microwaved for 90 seconds)
2t salt
1c whole wheat flour
3c white flour
1¾t yeast

* Be sure to use filtered water - the tap water in my area makes the bread too hard

I bought a spare set of measuring spoons and sacrificed a drinking cup to use for measuring. I filled up a tall plastic drinking cup with 12oz water and marked the line with a Sharpie (since 12oz is a weird number, I just use the cup to measure), then I keep the measuring spoons inside the cup for quick access. I then make a pre-mix bag using the gallon ziploc bags (the new bags with the zipper tab from ziploc or hefty are the easiest to use) with the following ingredients:

3T packed dark brown sugar
2t salt
1c whole wheat flour
3c white flour

After dumping all the ingredients in, I mix them around by hand to get it sifted (the brown sugar is packed and needs to be broken up). One pre-mix bag will make one loaf of bread. You can make as many as you want (I do a week in advance). I then store the following tools on a shelf:

Bread machine
Large bottle Olive Oil (with small pour spout)
Pre-measured cup with measuring spoons
Pre-mix bag
Yeast (kept in the fridge)

I found a black plastic set of measuring spoons at Stop-N-Shop that has a Tablespoon (for olive oil) and 1, 1/2, and 1/4 Teaspoons (for yeast - 1¾t total, so I just do a scoop using each teaspoon). My nightly process goes like this:

1. Fill cup with filtered water, microwave for 90 seconds
2. Brush my teeth while it's nuking
3. Measure in Olive Oil, then use the water to rinse off the spoon into the machine
4. Dump in pre-mix bag
5. Measure in yeast
6. Set color to "Light" and click the "Start" button

Takes all of 2 minutes...I wake up to fresh bread every morning and by the evening it's gone

i have none of those resources around, i live in the exact center of the middle of no where. i guess i just have to find a book that tells me how to correctly make bread without a machine. I know it can be done, i like making things myself and i have all the time i need, seeing as a work from 6am to 2:30 everyday.

dang... i woulda jumped all over that. thanks though, too bad i only have internet at work. it is oos now. gonna try the old fashoned way soon, I have what seems to be a similar bread recipe but not the " push the button" instructions.

I would probably try subbing half of the water with milk, and adding fresh walnuts/whatever nuts into it.

Perhaps even adding oveltin into it. Yum?

Enjoying a BLT courtesy of RideFree's recipe for lunch today

Very simple recipe - toast the bread, spread mayo generously on each slice, then top with sliced tomatos, lettuce, and bacon. I just cook some extra bacon in the morning so that my lunch is fast and easy to make :thumbsup:

I just made a really good loaf of bread... basically by playing around with the ingredients. The first attempt came out really good actually. I make (and mix) my bread by hand, even though I have a bread maker. Just tastes different... anyway

This recipe is for two ~1.5 lb loaves, which I think is a perfect size for me and my family. I bake two at a time, and store the other in the freezer, that way I only bake once a week.

Ingredients:

4 C. Whole Wheat Flour
2 C. Rye Flour (Really adds a nice texture I think)
2 Tbp. Vital Wheat Gluten (Makes the bread a little chewier)
4 Tbp. Butter (Of all the oils I've tried, nothing has beat the taste of butter)
6 Tbp. Light or Dark Brown Sugar (Could use a little less Sugar... perhaps 5 Tbp., but it worked well the first time.)
3 Tsp. Salt
2 Eggs + Water to equal 2 C. (Eggs can be left out, they don't change the taste too much, but I add them for the protein)
4 Tsp. Active Dry Yeast (Perhaps it may be a little too much, but has given a nice rise every time I used 4 Tsp.)

Knead for 8 minutes. Let rise in the oven (turned off) with a pan of hot boiling water on the bottom for ~60-65 minutes. Portion it into two even loaves (I use a scale), shape them to fit a lightly oiled loaf pan. Boil some more water and replace the water in the oven and let the loaves rise for ~45 minutes, then bake at 375F for 30 minutes. If you want a lighter crust, wrap aluminum foil over the loaf pans after about 20 minutes of baking.

Or of course, skip all that and use a bread machine (you might want to halve the recipe though).


Also, I regularly bake this bread (again... two 1.5lb loaves)

6 C. White Flour (I usually use Bread Flour, but AP flour works fine too)
2 Tbp. Sugar
1.5 tsp. Salt
2 C. Filtered Water
4.5 tsp. Active Dry Yeast (which equals exactly two packets of yeast if you're using packets. Creates a nice and fluffy bread).
~3 Tbp. Freshly Grated Parmesan cheese (any cheese will work really)

Steps are the same as above, except sprinkle the Parmesan cheese over the tops of the bread loaves right before you start baking. No oil or butter needed in this recipe.

If you are going to buy a breadmaker, buy a Zojirushi. They are far superior to anything else on the market. Although, they are much more expensive, it will last you forever. I've known people who have made thousands of loaves in theres and it runs like new. I just made a loaf of this in my machine and it turned out perfect.
