I like Tabasco Chipotle too, but for all those who love it--you should try El Yucateco's it's much better.
These days, cayenne based sauces are for very specific items--like BBQ. I just love the habanero taste so much. It's its own thing and enhances so many foods.
I really want to develop a capsaicin-free habanero, because the flavor is so unique and could be more universal if more people had access to it (the heat-averse types)
Glad you mentioned this. I will check out El yucateco

I think some hot sauces lose their heat after a while. Can anyone confirm?. . . but I already have a whole lineup of hot sauces that will last me years.
You're doing it wrong . It's all about selection.

The founder of the red rooster hot sauce is seeing red.
David Tran, CEO of Sriracha-maker Huy Fong Foods, said his company could have lost up to $10 million and faced bankruptcy if a judge had granted the shutdown of the factory that makes the much-loved sauce, according to a statement he provided to The Los Angeles Times.
Huy Fong Foods is engaged in an ongoing legal battle with the city of Irwindale, Calif., where its Sriracha factory is located. Last month, a judge denied a request by the city to halt the company's operations after residents complained that fumes resulting from the processing of chilies were causing headaches and burning eyes.
