Going to have to go with the favourite internet option and pick Sriracha. Franks would be second. You get a medium spice from them, so they're very versatile in a wide range of dishes.

Rumours of the Sriracha shortage have been greatly exaggerated. Apparently they were able to work out a deal to keep the factory open. Besides, Huy Fong Foods isn't the only company that makes the sauce. It's simply a type of sauce made with Thai chilli. There are other brands with different variations. I've tried one that uses fish oil, which is good for sea food.

El Yucanteco is the best and I put it almost anything.

Sriracha is too garlicky, too sweet and not hot enough. For Asian I use Sambal Olek

I like Cholula. It does have decent heat and there is a vinegar taste to it.

I like sriracha. I also like their garlic chili sauce/paste.

I like hot sauces with flavour and not just heat.

I also like horseradish sauces too.

I've never liked putting hot sauce on things, if a dish is hot by design I'll happily eat it, but I find no enjoyment in putting hot sauce on dishes that do not call for it just to make it hot. I'ts like putting steak sauce on steak, it means I've failed to make a well tasting dish.

Correct. That is why I drown my lunch sandwiches in hot sauce. Because they are boring as fuck.

At home I hardly use them (only Tabasco - for pizza). I have cayenne and fresh chilies in the house to get the hot right during the cooking.

I just like hot sauce. Putting it on food gives bulk to the sauce so I can make a meal of it.

Noobs. I have fresh habanero I nibble on when I need a little spice.
And Tabasco is the best "hot sauce".

I get that they like it, but to me it just feels like ruining a good dish.

for instance, I made crispy duck breast, dauphinoise potatoes, and red cabbage tonigt. At no point when I was feasting on that fowl most succulent, did I think to myself "some hot sauce would make this better".

I see people storing their hot sauce at RT for some reason, in cupboards. I have no idea why people do this. You'd think that the color change from red to brownish after time would clue them in that this is a bad idea, but, you know...some people.

Yucateco XXX is by far my favorite sauce. On something mild like scrambled eggs it imparts a great flavor in addition to the heat. In something like chili it is able to add kick without overpowering the other ingredients.

Cholula used to be my go to milder sauce. Also liked Tabasco Chipotle.

My latest go to for milder saucing are The Pepper Plant Original and Habanero. Great flavor, pretty garlicky, love it.

As for Sriracha I vastly prefer the chili garlic sauce. The garlic flavor is pretty subtle but the overall flavor is great.

It's been a "big" thing for about 10 years.....

I know the stuff has been around forever, but it seems to me like it's only somewhat recently (2-3 years) that you can't go 5 minutes without hearing someone talk about it.

Well it really depends on the dish. I love hot sauce but wouldn't dream of adding the stuff to the food you described. But there are plenty of other types of food where hot sauce just adds an extra dimension to the taste. You could also just add the spice during the cooking process, but to me hot sauce makes it versatile when you are sharing food with people who do not like hot/spicy food.

Clancy's in cabbage soup.
Sri Racha in macaroni salad.
Franks is meh to me. Use to use it for chicken wings though.
Tabasco goes on just about anything. I NEED it on eggs.

Lots of stuff out there to try.

I don't refrigerate vinegar, why would I refrigerate a hot sauce that's basically just vinegar and spices?

can't say I've ever noticed it losing its heat or turning brown. I keep mine in a kitchen cupboard at room temperature, out of the sun.

It's mainly a cultural thing. White people generally hate hot stuff. My mom is Korean so I grew up eating hot foods. My wife is white as it gets and wouldn't touch hot food when we first met. Now I've got her to the point she eats some but some stuff is still way too hot.

I put the green yucateco on pretty much everything I eat. Used to like the red but the green is hotter and has better flavor to me now.

Hate's a strong word. It's not really hate. It's more like oblivious to the existance of spice (aka Indian food) and heat (chilis). So many "white" families come from boring households where "salt" was the only seasoning you needed. And if you needed flavor you added ketchup. That was my family. Both my parents had the same household growing up. Nearly every white person I grew up with in the midwest was the same. It's not that we hated heat...we just never got a chance to freaking try it and develop a taste for it.

Once I got out of my house I actually started trying different dishes and realized that there was life outside of salt and pepper shakers.

I'm working with my kids to develop a bit of an appreciation to "spice" and "heat". We regularly do Indian dishes that are very flavor rich and other meals that are spicy in nature.
