Favorite hot sauce?

I prefer a mild sauce, Sambal Oelek

yes my pretty. love that stuff.

sriracha is hyped but it really is that good. and it goes so good on so many kinds of food. from middle eastern to asian to just put it on eggs or pizza.

cholula is great too, but mostly just for mexican and tex/mex or latino flavored foods.

There's a reason why all the "popular" ramen joints in the US have "spicy miso ramen" or some sort of spicy ramen. It ruins the authenticity of the Japanese dish. In Japan, almost all ramen is not spicy, and you go for the awesome broth factor be it shoyu or shio or tsukemen or whatever. Here in the US, it seems you can hardly find a solid bowl of shoyu. It has to be some new hipster ramen place where they offer a dish called "tan tan ramen" (a fusion of Chinese tan tan noodles which are spicy and Japanese ramen???) and then they sprinkle chicken karaage in it? The fuck?

Santouka which is a very authentic japanese ramen chain, serves spicy miso ramen. i am not sure if that is only in their US locations but one could find out.

their ramen is amazing with the melty pork. i've been to a bunch of authentic ramen joints in nyc, most do not offer a spicy option.

i am a tonkotsu broth lover. shoyu is good but nothing like a good tonkotsu.

My favorite name brand hot sauce is probably Melinda's Habanero. I can put that stuff on about anything.

And I've had some excellent spicy ramen in Japan. I believe it was a ramen shop near Machida station.

Tapatio for mexican type dishes and Franks red hot sauce for everything else.
