the special ingredient that makes it awesome is using good cheese, real butter, and heavy cream.

1 pint heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmigiano-Reggiano
Freshly cracked black pepper

A full stick of butter sounds like a bit much, although I've never added butter when I cook it.

then you've never cooked alfredo sauce.

I think I'll pick up some heavy cream later and give it a shot.

I use a pinch of cayenne pepper in mine. BTW: truly authentic alfredo (as served in Rome) doesn't even have cream. It's butter only, but the butter is exceedingly high quality.

Honestly - steak alfredo fucking rocks! (Pardon the language, but it had to be said)

I like chicken & broccoli alfredo personally, shrimp is good too. But wow, I had leftover steak from one night and thought to myself "hmm... I wonder". I even offered it to my wife who begrudgingly tried it, then promptly took the plate away from me.

And this is by far the BEST alfredo recipe I have ever had (outside of the really heavy artery-clogging restaurant varieties).

Ugh, garlic powder? That turned me off that recipe completely.

KT

I dunno, its one of the only dishes I actually use garlic powder in.

I would saute some garlic, salt, pepper and shallots in oil til lightly browned then add your heavy cream on medium to medium high heat. Add your cheese and let your sauce reduce the key to a good alfredo is the reduction. In another pan heat the pan up til hot add a drop of oil then butter ( the oil will stop the butter from browning) then cook your meat first then when your meat is almost done add your veggies in, veggies are best added later to get them al dente. Once your meat and veggies are done add them to your cheese sauce with your noodles and voila, you got alfredo but what would I know I am only a chef, lol.

What they don't know might not kill them.

It's one of the few things I actually like with cream cheese in it. Of course I'm Polish, so that explains a lot.

You must has some basil to sprinkle on top after you plate it.

Maybe sautee some garlic or onion to mix with the alfredo. Or even some chopped tomato.

Alfredo sauce can be bland without additives.

Try doing the alfredo with either spaghetti or angel hair pasta, I like it better.

It's kind of like macaroni and cheese sauce made with heavy cream and strong Italian cheeses. Not much to it, but you have to use a heavy sauce pan and keep stirring to keep it from scorching.

For something a little different: make the cream sauce, add crumbled gorgonzola cheese and sliced pears.
