One is just a straight port .exe with the original 4 GB of assets. The other has 25-50 GB of assets.
My understanding is that this X Remaster has new textures and maps. It sounds to me like someone that puts together a HD texture pack for a N64 game. What is the line between new textures and a complete redo? Replacing the engine underneath? Re-rendering the FMV? Heck I would take a 'remastered" FF7 if that is all we can get.
And yes, I know FF7 is not the greatest RPG ever. I would be like 4 or 5 for me.
BUT some of the plot elements were pretty revolutionary at the time (a main character dying, an unreliable narrator, etc.). Plus, lets be honest, any remake would add a little extra that would make it worth a replay. Square always does that with FF updates to new platforms, and honestly FF7 was lacking in extra stuff at the end.
Heck if they added in the long fabled resurrection of Aerith at the end of the game then we are talking about the greatest selling PS4 game of all time. Nostalgia is a strong motivator, and retrogaming is a big thing right now. FF7 was Square's peak, heck it killed the N64, why not remind people how important they once were?
