Its now of never.I've been considering rooting and upgrading mine as well, but have been holding back because I've never modded a phone before and really don't want to brick it.
I like the phone generally, but the bloatware pisses me off given the low built-in memory on this thing. I don't really have a whole lot installed but I'm always getting the low space warning because of the preinstalled crapware. Figure I can get an upgrade and clear out some crap all at once.
Not gonna overclock, I prefer battery life to balls out speed. Everything working for you so far though? Which package did you install?
My Optimus V is running stock. Haven't had the time yet to properly research how to root it. And I'm not going to just half-ass it and end up with a $100 brick.

There is a automated root process for that phone, it is super easy. Just download the file, run the .exe follow the directions and your phone will be fully rooted with clockwork mod on it. I had a optimus v shortly after they came out. That phone was a straight up piece on the stock rom. I ended up putting cm7 on it, overclocked it to 800mhz and it made a huge difference in the feel of the phone
Well it look's like i fibbed a little. You have to root first then run the .exe file. I will post a link to both right now for you.

This is the link to the .exe that installs your clockwork mod so you have recovery, you will see my name in the thread as being the second user to post. It worked 100% for me and on 3 other optimus V phones

You have to register at that site to DL the .exe file, if you dont want to register there just pm me your email addy I will DL it and send it to you via email. This is the least I can do since I have got alot of help from people here.
Will rooting my lg optimus v allow to me remove the junk apps that comes with it ?
1. Turn on USB Debugging (Settings - Applications - Development)
2. Copy the GingerBreak.apk to a /sdcard dir, then using a 'file manager' app (search for one in Android Market) install it like a regular app.
3. It can take up to 10 minutes, and will reboot automatically when complete (rooted), if attempt fails, reboot manually & run it again.
4. Download and copy the recovery image VM670NH_recovery.img (works with new & old OV screens) onto your /sdcard.
5. Install the Flash Image GUI app (save the .apk to a /sdcard directory, then open it with file manager). Run the app & select 'Recovery Image' option with the file above.
6. Copy the unextracted ROM .zip that you wish to install to the /sdcard dir. Also if installing a CyanogenMod Gingerbread ROM, the unextracted gapps.zip also needs to be placed in the same dir to flash right after the ROM .zip.
7. Boot into Clockworkmod recovery mode (From powered off state, hold vol-down, home, and power button until the LG logo appears).
8. FIRST, BACKUP ORIGINAL ROM! Don't continue until this is successful. Use vol-up/down, camera, & back keys to navigate in recovery.
9. Wipe Data/Factory Reset, wipe cache partition. Under Advanced submenu, wipe dalvik-cache. Then uner Mounts & Storage submenu, format all partitions EXCEPT /sdcard.
10. Install the custom ROM.zip from sdcard and gapps.zip too if going to a CyanogenMod ROM
11. Reboot and enjoy the new ROM, the first boot takes longer than usual, also some problems may disappear after rebooting

Took a chance and installed CyanogenMod 7 ROM via the Clockworkmod recovery mode console. Now running Android version 2.3.7 with full root access and ability to move all my apps to the SD card and without running out of free internal memory fast.
Make sure you have a 16gb micro-sd card or bigger and a way to read these cards on your p.c.
It feels like a brand new phone and LauncherPro by Federico Carnales makes the apps super fast. You can reinstall the default apps below from Market if needed, personally, i don't want them.
If anyone wants, i'll try to write up a simplified guide to do this. I had to look at multiple forums until i got all the right info.
I found that Widgets can't be made from the SD card, only shortcut icons. There was some comment about making symbolic links to get around this, still working on that.
