Why on earth would you need a dual socket 2011 for gaming? For a server or CPU-intensive tasks, maybe, but in gaming, the GPU is usually the bottleneck. (I would personally switch to 7970s for the increased memory, drop a SSD, and trade in the single 30" for 3 27" monitors).
The OP doesn't have room for three monitors though, which is a shame.
Some people don't want to deal with multiple monitors for gaming.
