is there an easy fix for it?

As you unscrew it, are you pushing in on the knob? I've noticed on the ones I've used if you are pushing inward against the screw you're actually closing the valve some. Then when you release pressure it pops out and the floor jack will start dropping faster than you thought. If it just shoots right down as soon as you start to loosen the screw though something is wrong with the jack. These aren't covered under Craftsmen's lifetime warranty?

No. the only tools that have a lifetime warranty are hand tools. IIRC.
