They are an excellent brazilian-style chain that is enjoyed by americans, AND brazilians, including my family in sao paulo. For a brazilian, you sure don't get out much.

I love the cheesy bread! Called pao di quiejo in brazil, and pan de queso in spanish. Yoki makes an excellent pao di quiejo mix. Not as heavy as homemade, but chewy and awesome.

Hehe, I made cheesy bread, there's easy online recipes. Just need some tapioca starch, cheese, and a mini muffin tin and you can bake like a couple dozen cheesy breads in a batch.

As to the others, yea after you've been to these restaurants, you avoid all the filler meats (chicken/sausage) and go straight for the nice beef cuts. I tend to prefer picanha (sp?), tri tip, and filet mignon w/o the bacon. Don't be shy if you want more.

Yep, that's it. Tapioca flour/starch can be hard to find but is called for. What kind of cheese did you use? A brazilian friend finds she gets the best results with mozzarella. I purchased the ingredients but haven't made it yet.

When I go, I skip the rabbits food and the chip stays green til I drop from gorging on rare sirloin cuts. Down side is that it would be a good several weeks before I'd want to eat meat again. I've only been to the one in Addison/North Dallas - good eats.

i've eaten at 3 of these types of restaurants, and fogo de chao was my least favorite. they had way too much salt on just about every cut of meat.

it was still good i've juts had better.

my favorite one was chima in tysons corner, va. not sure if it's a chain or not. 2nd best was over in barbados, and fogo de chao in dc is my least favorite. i wouldn't go back to fogo de chao though, simply because chima is better.

this. i was at that Chima last month while visiting the girlfriend in Virginia. definitely one of my favorite places. Soda costs $3.00 but there are free refills...if you are willing to flag down the waiters for a refill that is. other than that the place was well worth the visit.

Chinese supermarkets have tons of tapioca flour.

Fogo de chao is very good. My favorite is Marius in Rio, and then Porcao. But since the flight to Rio is long and expensive, Fogo de chao will do in a pinch.

Love Fogo. It's been too long since I've had their meat in my mouth.

Texas de Brazil was not nearly as good.

Will have to check out that Chima place, never heard of it and I live right here.

I had a Brazilian friend take me to a few churrascarias while staying north of Sao Paulo. Very cool experience but I would imagine the US version is not the same.

Reading about it now, how did I not know about this? Definitely going to hit it up soon when I can. Easier than going all the way into DC.

Went to one in Atlanta. Was not impressed, the meat was over seasoned. Will not go there again.

It's good, definitely worth a shot. I did notice, as others have pointed out, that it was a bit saltier than I was normally use to but still pretty good.

acheron, look at their website and find out if you can get any discounts.

before I took my gf there, I registered with their website to get a $20 off coupon. granted, they did tack on a 18% gratuity but I still saved a few bucks.

still comes out to $49.50 a person though. I have to say their flank steak, filet mignon (don't bother with the bacon-wrapped variety), picanha (sirloin) were excellent and I found myself asking them for more.

we were able to find parking off to the side of the restaurant. not sure if you have to pay for the structure though.

Try experimenting with different cheeses. You may want some cheddar or some semi salty cheese mixed in with the mozzarella. I used asiago and cheddar. Pure asiago was kinda bland, putting in some cheddar gave it some taste. You can also add salt as well but I kinda skimped on it since the cheese would already be salty.

Yea tapioca starch is found in asian markets. I think you can order it from Amazon as well.

I followed this recipe:

holy cow, 50$ for dinner? i could eat 10 times at mcdonalds at that price

Yea, sometimes those places have lunch prices ranging from 15-25$ which is a bit more reasonable which doesn't include filet mignon but you do get picanha...

Fogo is fun to go to about once a year. Any more than that and you start to hate yourself.

Go during lunch on weekdays. 1/2 price on the salad bar and meat, so it works out to be ~$25 for both (IINM).
Used to visit the one in downtown Minneapolis (Hell's Kitchen for breakfast + Fogo for lunch/dinner = ). Now there's one right outside work.

it's definitely better than going down to fogo in dc too.

the atmosphere at chima is also much better than fogo. fogo is very tightly packed and it was very crowded when i went (9pm on a wednesday night) and chima has more room and wasn't nearly as crowded.
