They are an excellent brazilian-style chain that is enjoyed by americans, AND brazilians, including my family in sao paulo. For a brazilian, you sure don't get out much.
I love the cheesy bread! Called pao di quiejo in brazil, and pan de queso in spanish. Yoki makes an excellent pao di quiejo mix. Not as heavy as homemade, but chewy and awesome.
Hehe, I made cheesy bread, there's easy online recipes. Just need some tapioca starch, cheese, and a mini muffin tin and you can bake like a couple dozen cheesy breads in a batch.
As to the others, yea after you've been to these restaurants, you avoid all the filler meats (chicken/sausage) and go straight for the nice beef cuts. I tend to prefer picanha (sp?), tri tip, and filet mignon w/o the bacon. Don't be shy if you want more.
i've eaten at 3 of these types of restaurants, and fogo de chao was my least favorite. they had way too much salt on just about every cut of meat.
it was still good i've juts had better.
my favorite one was chima in tysons corner, va. not sure if it's a chain or not. 2nd best was over in barbados, and fogo de chao in dc is my least favorite. i wouldn't go back to fogo de chao though, simply because chima is better.
Yep, that's it. Tapioca flour/starch can be hard to find but is called for. What kind of cheese did you use? A brazilian friend finds she gets the best results with mozzarella. I purchased the ingredients but haven't made it yet.

Chinese supermarkets have tons of tapioca flour.
Will have to check out that Chima place, never heard of it and I live right here.

havent been there yet. Have had Churasco is chicago, NYC, Miami, Rio, Curitiba, etc
Plataforma isnt that much better either.
