I'm eating an Adobada Quesdilla from Albertos right now, I 1st had Adobada towards the end of last year. It's Spanish for marinated meat. It's usually pork, but you'll sometimes see it made with Chicken or Asada. It's typically marinated and cooked in a red chili sauce, the few places I've had it, it's not spicy at all. But holy fuck it has a lot of flavor. I grew up in So Cal and have eaten lord knows how much Mexican food over the past 35 years. The 1st time I had Adobada I almost shit myself. I had never even heard the word before I tried it at that taco stand last year.
I don't see it on the menu at many Mexican places, which is probably a big reason I never tried it as a teen. Right now with each bite there's red sauce literally dripping out of this Quesdilla. SO FUCKING GOOD!
