for i7 920 @ 3.4GHz, which R9 series card is for me?

OP, before you buy a card tell us what brand and model you are looking at. Not all brands are created equal. You'll likely get some conflicting views, but there are some that are better to just stay away from. Like the single axial fan 7950's (unless they're cheap cheap, of course), for example.

I'm waiting for an ASUS or Gigabyte card to be released with their heat sink and fan solutions and possibly OC edition.

Also, I checked out the 7970Ghz and it's too big, and has too many DisplayPort.

I would like to get TrueAudio on the card, I guess, just to have it.

Upgrading to Haswell would be a waste of money for me, and it would require me to buy a new $300+ audio interface, as my motherboard is one of the only ones ever to have the famed TI Firewire chip onboard which I run my audio box off of.

Similar question for my rig. Would it be an overkill to get a 290x or a 780ti with my i7 860 at 4 ghz?

I'm one of the few here that thinks TrueAudio is going to rock. Probably because I'm an old audiophile from way back. Looking at your sig. you are into sound more than most. I think you'll appreciate it.

For what its worth - I just jumped on a R9 290 last night. I'm running a i7-930 at 3.8ghz.

Not really if you play FPS games and like to use MSAA. From a cost perspective, those 2 cards are overpriced. It's better to get an after-market 290 or something like a Gigabyte Windforce 3x Ghz Edition 780 with 1071mhz clocks for $510 on Newegg. I wouldn't even consider 290X.
