If the car is sliding around, it's not "gripped to the road." You're sliding because you're either trying to go through a turn too fast, oversteering, accelerating too quickly out of a turn, or braking hard while turning. Forza's a simulation, you can't play it like it's an arcade game. If you're sliding around too much your tires will get hot and have even less traction and you'll slide even more.
You don't really feel/see bumps you go over because the track in the demo is a purpose built race track. There aren't a whole lot of bumps.
I assume all the brake rotors glow in the demo for "wow factor." In the actual game, stock brakes won't glow red, only the high performance carbon ceramic ones will, just like in the original.
