There are many american style sushi recipes that use cooked meat. It doesn't have to be fish either.

Sushi (?) in japanese actually means "anything made with vinegared rice" or "seasoned rice".
Su (?)is vinegar.

So in fact, it has nothing to do with raw fish which is a common misconception.
