The US is only of the only countries that refrigerates eggs. If I'm not mistaken, it's even illegal in Europe to refrigerate them.

Ketchup doesn't need refrigeration? I mean, I know it doesn't before it's open, but doesn't it say to refrigerate after opening on the label?

Not really. The acid in the vinegar inhibits bacterial and mould growth. It's fine if left for a few days.
