Fridge door got left open for three days...

...does that mean we toss everything? Most things? Only a few things?

The milk was warm and got tossed, along with the eggs. Do all of the salad dressings and jellies and BBQs and cheeses and lunchmeats and yogurts and everythings have to get tossed?

Condiments That Do and Do Not Need Refrigeration
It seems that many people are confused about whatneeds and does not need refrigeration- in the condiments dept. Here's my go at it:

Condiments that DO NOT need refrigeration are those that are primarily made up of:

SUGAR(jams,jellies, honey, maple syrup, caro syrup, molasses etc)
or SALT: soysauce, oyster sauce,fish sauce etc.
or ACID : vinegars, mustard,hot sauce, steak sauce, worc sce.,ketchup
or ALCOHOL, except Wine: madeira,marsala, port, sherry, liquers,etc
all OILs( but those that are nut or seed based can more easily go rancid in hot weather, so best to keep refrigtd)

Condiments/sauces that MUST BE refrigated are those that are NOT primarily made up of the above ingredients AND that contain either:
VEGETABLES( i.e. vinaigrettes with garlic or shallots or onion or fresh herbs)
or FRUIT (Ponzu sauce, salad dressings w/ citrus juice or other fruit, bottled citrus juices etc)
or DAIRY (i.e.mayo or creamy salad dressings, tadziki sauce etc)
NUT OILS (refrig staves off rancidity)

open everything and smell it , if it smells bad toss them. Many things in your fridge are tougher than we think.

Also , you shouldnt have tossed the eggs, many people keep their eggs outside the fridge anyways. to be sure you could have also just cracked each egg as you needed inside a bowl for inspection before dumping them on the pan

Ketchup doesn't need refrigeration? I mean, I know it doesn't before it's open, but doesn't it say to refrigerate after opening on the label?

I considered it but there were only three and we need to make a grocery trip anyway.

Don't restaurants leave it out on tables?

we never refrigerate our eggs. they stay just fine as long as you eat them in less than two weeks. when we buy eggs from local farmers, we leave them on the shelf for weeks or even months.

also, lol @ needing to refrigerate ketchup. if that was true, most americans would be dead.

Re: ketchup. I just dont like leaving a giant 84oz bottle of it on the dining tablem.i hide it in the fridge.. Sorta belongs there with the other condiments

no, it doesn't. same with real mayo, I believe. Most of those labels on bottles are just liability issues. It's safer to tell people they should probably refrigerate most things, which makes sense in the end, because while most foods are generally fine, they have a range of acceptable temperature requirements where they will be OK.

Take yogurt: a tub of just about any type of yogurt will be fine at RT for several days, maybe a week. It will be fine in your fridge (roughly 5 C) for a month or longer. Take it with you in your purse, on a hot summer day, and it will spoil by the end of the day.

butter is always always always fine at RT. In fact, it's best to keep it there at all times, provided you are clean and don't do anything else to attract random bugs. Eggs are fine at RT. They evolved to be near-sterile little incubators, of course.


OP: my advice is to just eat everything and report back. :thumbsup:

Unless you are making BBQ sauce with it what on earth would you need 84oz of ketchup for? It would take me years to consume that much ketchup.

yeah i dont think eggs need refrigerating. have you ever seen a chicken refrigerating them? also they have a fairly long outdate. my housekeeper used eggs that were two weeks outdated to make brownies and they were fine

any kind of meat that isnt vacuum packed i would throw out for sure. three days is a long time.

i make rice a lot and i leave it in the rice cooker with no refrigeration. its tastes fine the next day, but on the second day it gets slimy, the taste changes and it smells a little off, so ur fridge was probably open long enough for damage to the stuff inside

you need to put 'mass produced' eggs in the fridge if you're not going to use them fairly quickly (eggs from chicken farms that treat the chickens like shit - the eggs don't make it to you for a LONG time after they're laid). eggs from local farmers can stay on a shelf for months with no issues. they don't have to be refrigerated in either case, but you should eat the 'mass produced' ones a lot sooner.

months????? i noticed eggs have an out date thats like 3 weeks later, which seems like a long time, but i didnt realize that they could already be MONTHS old

yeah, but you probably do want to refrigerate fertile eggs...

The US is only of the only countries that refrigerates eggs. If I'm not mistaken, it's even illegal in Europe to refrigerate them.

The stuff way at the back bottom might actually be fine. Remember cool air goes down.

But, how was the door left open that long? And how wide, like completely open or just a crack?
