Fusion Cuisine, What to do with Kimchi?

OK I like spicy Kimchi and once in awhile I will go to Shop n Save and buy a jar or two. Now I've been eating it straight out of the jar, but now I'm thinking about making fusion dishes with it.

Some ideas:

Sausage with Kimchi and mushrooms served over fried rice.
Ground turkey mixed with Kimchi and mushrooms.
Chop Suey with Spam and Kimchi.

This is off the top of my head, so any ideas?

put it on everything?

tacos, burgers, dogs, probably good on a fried egg, etc.

Has more veggies in it besides cabbage as well as being strong on the garlic.

And way more chili. Sauerkraut is just fermented cabbage. Kimchi is the same cabbage but with a handful of other spices and ingredients all happily fermenting. Good stuff.

Actually I have had different types of kimchi, Radish, cucumber, garlic stem etc... All good stuff. The only kimchi I abhor is the cabbage with oyster. Something about the fermenting shellfish almost turned my stomach.

i made kimchi brussels sprouts for bloody marys. pretty delicious

One question, can you fried brown rice? I'm thinking of doing sausage with mushrooms and kimchi over fried rice.

As a korean growing up eating komchi that's fascinating to me how you guys eat it.

Kimchi is always paired with rice. That's the entire purpose of komchi.

It's very strange you put it on hotdogs and stuff.

It's like me taking American cole slaw and rather than sticking with fried chicken, I put it next to pasta and stuff.

Well we use it like sauerkraut. Although in my case I will use rice along with whatever dish I create.

There are so many varieties of kimchi. And store bought kimchi is crap. And they pretty much only sell one variety in the store. So if you don't understand kimchi, how can you make fusion?

Oyster is popular in one providence. Most use salted shrimp and fish sauce. But water kimchi doesn't have any seafood.

Well Shop n Save has both mild and hot. I usually get the hot.

Don't mistake the word "fusion" as meaning he plans on opening a restaurant. He just wants to use kimchi in different ways, which doesn't require a master course in order to "understand kimchi".

Thank You, I want to eat the stuff in ways other then straight out of a jar.

You have to master the basics before you start experimenting. Which is why fusion food generally suck. Because the people creating the fusion generally don't even have the basics down. Combine two terrible foods and you're going to end up with the same.

You don't need to master anything to use kimchi as a side or even in the main dish. Again, he's making a meal for himself, not opening up a restaurant. Yes, maybe making kimchi from scratch and mastering it would be best but a) maybe he doesn't have time for that and b) it's not what he asked.

If you'd like to educate everyone on the vagaries of kimchi that's wonderful, but he's asking a simpler question than you think he's asking.

That's my opinion generally. I use it the same way I use (or would, I'm not a big consumer of it) Indian pickles.

EDIT: that sounds vaguely dirty

Kimchi is not always paired with rice. That is not the purpose of kimchi.
