Castlevania: Symphony of the Night, pretty much any Final Fantasy game, and Diablo 2/LoD (Mars and alot of other good works) stood out for me. I'm sure there's alot of others I can't think of off the top of my head.
And oddly, I thought that the original Unreal Tournament had good adrenaline pumping muzak too.

RPGs generally have great soundtracks. Chrono Trigger, FF6, FF7, FF8 imo (even though the story wasn't as hot). FF9 wasn't as memorable to me. Zelda had a great soundtrack. Grandia for the PSX also had a great soundtrack. wild Arms was also good, albiet not GREAT.
More current games? Hmmmm I don't play games all that much anymore lol
Hands down the best game soundtrack I can remember is in Legend of Mana. Sometimes I left the game on while I was doing other things jsut for the music...lol, prolly should've just bought the soundtrack.
Honorable mention would be Symphony of the Night, that game had some amazing music as well.
EDIT: Forgot to throw in the Guilty Gear series, some of the songs from that are awesome.
Recently Shadow of the Colossus for me. A must listen! Evokes a lot of emotion and is always appropriate for the colossus fights, exploration, cinematic, etc sections of the game. The mood would not be the same without it.
