I was thinking the same thing. I couldn;t believe it so I had to read that twice to realize that he is actually doing that, that's gross man.

I have done the same thing, but i reduce to 50% or so before.

Edit: for all the doubters, have you ever heard of carpaccio or tartare?

DO NOT REUSE THE MARINADE without heating it up after raw meat is in it... no matter how fresh the beef is.. it does not matter.
If you want to use the rest of it, put it in a sauce pan, bring to a boil, let simmer for 5 minutes THEN use it.

Yeah you can heat it up, that's fine. It kinda ruins the tomatoes tho... makes it taste too saucy. It's not going to get you sick if you reuse the marinade. I've done it. It's perfectly fine.

A guy at work told me that ketchup, pepsi and italian dressing is an amazing steak tip marinade. I have yet to try it but it sounds gross. My 2 cents.

e. coli grows on beef. There may not be an inside the steak but there can definitely be e.coli on it. If there is contamination of teh beef, there WILL be contamination of the sauce. The only reason steaks are safe to eat is because they're seared on the outside to kill the bacteria

Never done that, but coke/pepsi contains an acid that will tenderize the meat, and the sugars will caramelize with heat. The dressing is just oil and vinegar, that's fine. Not sure about the ketchup though.

I like the course kosher salt and free ground pepper for my steak.

I found this really good meat and pulty seasoning at Target. I put it on both sides of the steak, put some salt on it with a little pepper. Get the grill hot and seer both sides leaving the juice inside.

I made this a couple of weeks back and each bite was so damn good, i couldnt wait for the next. It kept the steak very juicy and has a great flavor.

Do you have a broiling pan then? (it usually comes with the stove) you can use that. Just don't put a steak in teh oven. Use the broiler.

while you guys are right the odds are very very low. would i take the chance? no. but the odds are you will not get sick.

I know, and do agree with you that the chances are slim, i still won't take that chance. Call me paranoid, but with all the stuff that has happened over the past few months with food contamination, i would rather take the extra few minutes to cook the sauce or whip up more that has not touched the raw beef.

chances are you wont' get sick by using the marinade that you put raw beef into.... however that doesn't not mean it might not have ecoli.. the ecoli can get on a steak if the butcher is unsanitary. if his cutting machine has ecoli on it, and it cuts your meat, do you think there's going to be ecoli on the beef? of course... that's why you should sear the meat first... and yes, there are some dishes that use raw beef, but that meat is usually handled very carefully... most of the ecoli scares are from ground beef, where the ecoli is still on the outside of the meat, but the meat is all ground up and mixed up, so the ecoli can be in the middle where the heat doesn't kill it... just kill the ecoli and boil the marinade....

oh, and my suggestion is, if it's a cut like rib eye, just use some salt and pepper... cook it to taste, then remove the meat, let it rest, in the meantime, throw a couple tbs of butter into the pan, some diced onion, garlic, and sliced mushrooms, pour in some good red wine... maybe a couple dashes of worchestire.. let it reduce... yum...

we have comeing in today.

2 bundles comeing.

thats :

28 Ribeye's
28 top sirlion steaks
8 rolled sirloin tip roast
20 pounds of ground chuck.


we also have a extra 30 lbs of ground chuck comeing.

that will last the summer!

I think that qualifies as bulk beef

well the sirloin tip roast are alternator size (4-5 lbs)

can i ask you how you freeze your meat to make sure it tastes good after thawing?
It always seems that when i freeze steak or chicken that it tastes bad... even if i use freezer bags and foil.
