I remember a while ago we had some threads about steak and I'm looking to cook some steak tonight for the family. Anybody got some good recipes for me to try to cook? I'm just looking to cook a steak with some vegetables and some kind of sauce that'll blow my mind away.

I tried looking up some recipes but they never show any pictures of the final product. Help me out AT!

I marinade in worstershire sauce, crushed tomatoes, minced garlic, pepper, and onions.... marinade for 20 minutes. then use the marinade for a sauce after you cook it.

Are you grilling?

If not, and you insist on some kind of sauce,

dice some garlic, onion, mushrooms as finely as possible. Mix with some kosher salt, ground pepper, and olive oil.

Brush on.

Sear both sides of steak for about a minute over a hot CAST IRON skillet.

Preheat oven to about 350 degrees, then toss cast iron skillet in for a few minutes (depending on how you like your steak cooked).

And I think he means you set aside some of the mixture as a sauce, not the leftovers of the marinade. Putting uncooked meat into a marinade, then eating that same marinade can give you food poisoning.

But I like teh just salt and pepper route on a grill.

I do put it aside but if it's steak it wont give you food poisoning. there's no ecoli in steak.

I was thinking the same thing. I couldn;t believe it so I had to read that twice to realize that he is actually doing that, that's gross man.

Not a problem with Steak. Minced beef and poultry, yes. I wouldn't recommend it, but I'm sure he has never falling ill and nor will you, 99.7%* of the time.

I thought the reason you can eat steak rare is because only the outside of the steak touches the air. It seems if you put it in something, with it raw and use it, you could possibly get sick.

My favorite is to follow ye olde salt+pepper cast iron skillet method, and add some blue cheese while its under the broiler. Or reduce some red wine and saute mushrooms & shallots to top. Or cook some crabmeat in butter & seasonings and top with that. Or a bearnaise. Or do it au poivre....damn, I'm hungry now.

OF COURSE THERE CAN BE E COLI IN STEAK.

And you know where it is going to be? It's going to be on the OUTSIDE of the steak, where your marinade is making contact.

That's why it is safe to sear red meat and eat it rare. The bacteria usually can not permeate deep into the muscle...it will be on the surface of the cut from bad hygiene at the processor/butcher/whatever.

That said, chances are you won't get sick, but man, don't spread misinformation like that.

Horseradish encrusted tenderloin

1) Whole beef tenderloin
2) Whole horseradish root

Take the tenderloin out of the fridge about an hour before cooking. Grate horseradish root. Put tenderloing on backing sheet, liberally salt/pepper/garlic salt. Cover entire loin with raw horseradish covering a good 1/2 inch or more. Cook at 375 until a temp of 138-140.

Remove from oven, let sit 30 minutes. Cut into medallions and eat. Serve with garlic mash potatoes (you can throw a head of garlic in with the meat and roast it for almost an hour)

Mongolian Beef Barbeque

Make a marinade with Green onions, Sesame Seed Oil (2 tblsp) Vinegar, Soy sauce Marinade for 2 hours or overnight. cook on grill. Meat should be sliced think and cooked fast. Or stir fry it with vegetables. For a treat try taking some Sweet Potatoes cutting them into chips and frying them up. I like to use a Korean stir fry breading mix and dip them into the batter and fry them up, with some zukini and yellow squach.

I am sure it's ok, but it seems unsanitary because you don't know how the store handled it.

I know there is a Korean dish, kind of like meat sashimi but it is marinated in Korean BBQ sauce. I heard it's very good, and it doesn't make anyone sick, but the meat is handled very carefully.

Yup, everthing else is trivial. Grill can be used in place of oven.

What if I don't have a cast iron skillet? Can I still cook a mean steak in the oven or on a pan?

If you have a grill then that will work fine. First let the steak rest for 30 mins on a plate out on the counter, you want it to be close to the same temp inside and out. (or else you get uneven cooking)
I don't go heavy on spices and rarely marinate, just salt, pepper, garlic salt, perhaps some other stuff.
