Sounds kinda like Sqoon or Cobra Triangle.
But these aren't coin-op games.

Name the game for which the moving sit-down version actually lifted a few feet in the air and could go up and down, pitch forward, backward, left and right in sync with your actions.

Man, I kicked ass at Crystal Castles, I could beat the game on a single quarter with one life in record time, when you beat it quickly enough with a high enough score the screen would go nuts with a compu-phsychedelic display, my best score was a bit over 850,000

You could warp to different levels but I played every one perfect, there was one small angled maze with ten trees just hauling ass trying to get you, I was the King of the Crystal Castles the machine always displayed my initials cause no one could ever beat my score it was a "J" and the bear symbol and a "T" the "J" for me and "T" for my girl at the time, I wanna go back, just for a day
