Good polish sausage?

Me and the girl enjoy our polish sausage, but outside of that provided by the midway fair company at the Wisconsin Settendemai event and the Blueberry Festival here in Indiana, we can't find a good sausage. We're pretty sure we want sausage, not kielbasa, though that may be wrong too. We want a good snap in the rind, not soggy like hot dogs. Bought some from Aldi's, and it tasted ok, but it had no snap and just didn't seem as flavorful as those sold at the fair.

Any companies make a good sausage and distribute it in a national chain? We have Kroger's, Martin's, Wal-mart, and Aldi's as some of the chain stores here.

You are in the midwest. There should be a Polish (or even a German) deli somewhere around you. They are all over in the Chicago area. Visit a deli and ask them for a good sausage. They have plenty of them.

We're just south of South Bend, IN. I'll ask around, see if I can find a good smaller shop. Anyone know of anything down in my neck of the woods , like in Albany, Americus, or somewhere in that area of GA.

If you want the "snap" you probably just want one with a natural casing .... In the NW burbs of the chicago area it's easy to find, dunno about in IN though .... good luck

Yeah i figured it was a natural casing I wanted. I hope this weekend I'll have some time for us to drive around, find something with "snap" from one of the local delis.

Yes, you are correct. I meant to use the Chicago location as an example to infer that sausage should be readily available anywhere in the midwest due to the European influence.

Have you been to Strawberry Fields on Springfield in Urbana? I liked that store but it is a bit expensive. They may have some sausages there. (if not, try the Seibel Center.)

yup! I used to eat there all the time as I work a few blocks away. but my diet changed and is not SF friendly anymore.

and yeah, hahahaha, plenty of sausage at the siebel center

I also cannot imagine having a hard time finding a good meat market nearby, especially near South Bend, its not a small town!

while that is true, the OP is about an hour. if he's really after good sausage he might want to make that trip.

but he should first find a local deli.

FYI: Keilbasa is the Polish word for sausage. So Kielbasa or Sausage is the same thing.

We always had Slotkowski sausage when I was growing up. It is good. Don't really know about any other brands.

johnsonville makes some uncooked sausages that are pretty good if you can't find a good meat shop.

The Amish is my area make sone awesome sausages.

You could also try some flea-markets too as many small vendors sell their wares there. I am sure you can find some good stuff there.

Try writing or calling these guys in Rockville, Maryland. They can tell you who makes their product. Most of it comes from specialty manufacturers in Chicago and NY. They have OUTSTANDING Polish sausage, especially the double pepper and hunter styles. It is so good and you don't even cook it, just slice it up and serve.

I've bought quite a bit from Usinger's in Milwaukee. Their landjäger (not Polish, but terrific to carry on long hikes) is also great. I used to ship it to buddies on military deployment for the holidays.

He should go to the meat science laboratory. My buddy would get his meat from there a lot but for me it was located too close to the cemetary for me to consider it as a viable source.

I actually drove 30 miles right to the sausage factory to pick up 5 lbs. of fresh polish kielbasa yesterday. The wife and I both prefer it over the smoked.

If you were in Detroit I'd point you in the direction of the Dearborn Meat Co. (formerly Dearborn Sausage) which is in the shadow of the Rouge plant in a very industrialized portion of the city.
