GPU solutions: Multiple Monitors?

I'm running around researching and designing my next build and there's one thing I was hoping you could help me with. I'm torn between three options for my resolution:
Run 3x1080p monitors in a 5760x1920 config
A single 1440p monitor
3x1440p monitors in a 7680x1440 config
The decision is gonna come down to my finances in the next two months and the cost involved in getting all the necessary parts. What I'm here to ask is not about costs it's about requirements. What sort of GPU solution would it take for each of these three configurations to be enjoyable for gaming with details turned up to eleven ?

Not very helpful, but personally I would go for an ultra wide 1440p (3440x1440) freesync/gsync panel.

It is about half the amount of pixles as 4k, so very much doable with current high end single GPU setups. Fury or 980ti level would be sufficient.

Any higher resolution that that, are you are looking at dropping quality settings and/or running two or more GPUs, not worth the trade off in my opinion.

With ultrawide you get that wider than wide screen gaming feel, without any pesky bezels either.

UltraWide  - 3440×1440 - 4.9MP
4k         - 3840×2160 - 8.3MP

3×1080p    - 5760×1080 - 6.2MP
3×1440p    - 7680×1440 - 11.1MP
