Black olives aren't even supposed to be black. What most people think of when they think of Black Olives are those horrible bland canned things that are actually dyed to look black. Fail.
Fresh black olives from a local premium grocer are actually pretty damned good, I was surprised to find. They are usually purplish in color.
I'm no expert on Olives, but find this post to be ridiculous. They likely turn black due to the Heat involved in canning them.
