Black olives aren't even supposed to be black. What most people think of when they think of Black Olives are those horrible bland canned things that are actually dyed to look black. Fail.

Fresh black olives from a local premium grocer are actually pretty damned good, I was surprised to find. They are usually purplish in color.

I'm no expert on Olives, but find this post to be ridiculous. They likely turn black due to the Heat involved in canning them.

I love them stuffed with jalapeno's, blue cheese or garlic.

one of the nicer grocer's near me has a olive garden. its fricken awesome

Are you daft? Some canned black olives are dyed, and virtually all canned black olives you see are artificially treated to get the black color.

A real 'black' olive that is naturally ripened is NOT black.

Ya, I guess I'm "daft" because I don't know everything.

Oh, and "some" producers use dyes, not all. Who is daft now? Yes, "Black" Olives do exist and are not all Artificially turned that way.

I think all naturally colored black olives are deep purple. I honestly never looked, but that's what I always assumed.

Could be, Ark is just being an Idiot about the subject though. It's like Black Hair with a bluish tinge, is it Blue or Black? Doesn't really matter and could go either way.

No, it's quite different. Anyone who has had both can tell you definitively :

Naturally ripened 'black' olives look like this for the most part, sometimes a little darker, sometimes a little brighter depending on the variety in question :



Canned 'black' olives which are artificially ripened or dyed come out almost completely black, and are the ones typically used on Pizzas or in fast food places. They typically taste bland and are cheaply produced for mass market consumption.

It's a pretty big difference, and it doesn't take much to educate yourself on the matter. You said that you found my post ridiculous, even though I responded with the very description I was talking about. If you don't have a local supplier of quality fresh olives, at least google it before you go off on a tangent

I was the same way until I tried a real black olive. Do you a local premium supermarket? There are some amazing varieties out there, it's akin to the experience of having your first real tuna steak after only eating canned 'chunk light' tuna as your only point of reference.

The fresh premium green olives would probably particularly interest you But I was very surprised at how good a fresh black olive can be, they taste NOTHING like the crap that passes for 'black olives' as most of us commonly know them as.

Thus folks who "like olives on pizza" really only like the saltiness of the brine they are usually packaged in, vs the actual olive flavor.

Where they actually use fresh kalamata olives, and not canned garbage.

Canned olives in general are garbage, and unfortunately this is most folks primary exposure to olives (via olive trays and cheap salads and pizza toppings).

OMG speak the truth, AMEN brother!

Olive seekers - there really isn't much taste difference between the two, thus those who like one over the other really haven't had a good one of either.

I saw your post above and was going to comment. I'm 100% certain my experience with black olives has been the cheap dyed ones. Good analogy on the tuna. I owe it to myself to retry black olives.

I can't... resist.....

I can't stand American olives...even ones that masquerade as Spanish Manzanilla olives. Actual olives from Spain are the bomb. If you want to try, get some from www.tienda.com and you will see what real olives taste like. I prefer the Ybarra brand of manzanillas.

I saw your post above and was going to comment. I'm 100% certain my experience with black olives has been the cheap dyed ones. Good analogy on the tuna. I owe it to myself to retry black olives.

P.s.- I find that olives go best with certain things : a few to consider :

- Dolma / Dolmides (the little wraps with rice, and sometimes meat)

- You can pit them and stuff them with Blue Cheese (not my fave), or Feta (again, not my fave but this is also very popular), and my personal faves but not as popular : Goat Cheese or Cream Cheese.

- Riesling Wine or other sweetish wine. This pairs nicely with the salty flavor of a good olive

So much olive hate.... Very polar in here.

When I was a kid I couldn't stand either one. The smell from canned black ones would make me vomit. The sight of green ones would make me shudder. DOn't know when or how things changed, but I love em ALL.
