if I don't have a thermometer, how can I tell? is there a time range? aside from "looking" done?

Cut the meat and look at the center. If it is still pink and bloody it is most likely not done. Unless of course you like your steak rare.

Otherwise, how thick is the steak? What heat source are you using?

Never cut a steak to see if it's done, you'll lose all the juices. Wait about 5 minutes after you take it off before cutting into it. How long to cook it depends on how thick it is, how fatty it is and what the cut of steak is. Generally speaking, over medium (~400 degree) heat you're probably looking at 6-8 minutes per side.

no one here knows the weight or thickness of the meat.... so cannot say how long to cook it. And never cut or stab a steak, unless you want to eat shoe leather.

Make sure the steak is room temp and the grill is HOT. Only turn the steak ONCE!

to test for doneness... touch the middle of the steak. It will feel kinda spongy when rare, have some resistance when cooked to medium and firm when well done.

Depends how you want it...use your hand to compare the way you want it...

Explanation:

Touch

Thumb-Pinky Finger = Well done

Thumb-Middle Finger = Medium

Thumb-Index Finger = Rare

You touch the area of your hand below your thumb, for each finger you use, you will feel a different firmness...play around, you will see what I am talking about, its harder to explain in words but it's really simple.

Touch your hand, touch the steak, once they feel about the same, your steak is ready

This is a master way of cooking the steak, passed down from the master himself which will remain annonymous...
