Yeah, the fermentation process produces carbonation, kind of like champagne.

Perhaps so, but that wouldn't emulate the taste of a good hard cider.

Actually, the best cider I've ever had was "Ember" from Alpenfire, but unfortunately at $17/bottle I don't find their good stuff affordable. I've also never seen it for sale outside Washington state.

You realize that true hard cider is just cider that has been allowed to ferment some; then they kill the process by pasteurizing and bottling it.


get a Gallon of generic cider and leave the top off for a few days until is starts to turn.

then enjoy.


I used to bootleg cider to school and sell it to the dorms. Originally I would have 4 gallons a week that has just turning hard. At 100% profit, it was cheaper than beer and also legal.

At 50% profit; they could harden their own.

Used to make 2, 50 gallon barrels a year. Get it fresh off the press add wine yeast and an air lock. When I got tired of drinking it there was always the still.

Cider is good stuff. Just be careful not to drink too much of it, as it (like drinking a lot of apple juice) can have a laxative effect.

Good choice ViperGTS, but may want to give OP a heads up that Woodchuck Bourbon select is only produced in December. The supply has pretty much dried up now that it is April. On the flip side Woodchuck's Summer cider just came out and is the best of the 4 season themed ciders from Woodchuck. The Summer cider should be readily available for next two to four months.

Cider, like wine, is something I really have to be in the mood for. I'm not a terribly big fan of fruit alcohol. That said there's an orchard out near Toronto that makes a decent cider. They also make a hard pear cider that's pretty good.

Shock Top has a new Honeycrisp Apple ale, I haven't tried it but was told it tastes like cider.

I picked up some yesterday while at the store cause of this thread..

The commercial stuff that's really sweet is just nasty. I've had home-made hard cider that is much dryer with some bitterness to it that tastes great though.

Local ciders are usually good and usually taste fresher than the commercial ones... but I don't think I've ever had a bad one either way
