Easy. Here are a couple:
-
Fajitas:
2 red bell peppers chopped into chunks
1 onion chunked
2 tomatoes chunked
1-2 lbs of your meat of choice
1/2 cup key lime juice (KLJ)
1 can low sodium refried beans
1 avacado diced
1 cup low sodium soy sauce (LSSS)
Dash of fajita seasoning
Marinate your beef/chicken/emu overnight in some key lime juice, garlic, and soy sauce. Cook it until it is to your liking, then add the vegetables, liquid, and seasoning. Cook until most of the liquid is gone. Add beans and avocado and serve. I don't usually use tortillas.
-
Pork Tenderloin:
1.5 lbs pork tenderloin
1 onion chunked
3 gloves of garlic chopped
1/2 cup KLJ
1/2 cup LSSS
1lb potatoes
1/2 lb green beans
Herbs de Provance
Oregano
Marinate pork in everything except for potatoes and beans. Cook pork + marinade at 250 for a few hours. Add potatoes and beans. Cook until potatoes are soft.
Remember that tin foil and a rice cooker are your friends. Use liberal amounts of bell peppers, onions, garlic, celery, and LSSS.
