One thing I definitely plan to do is oc the 7900GT. Right now I'm using coolbits and I hit find optimal and my core is 511 MHz and my memory is 775 MHz. What's the deal with that?
I thought it would go much higher on stock voltage. I do plan to volt mod it but I still thought I would be able to get much more from stock. I was shooting for 680 core and 900 memory with the volt mod.
Any suggestions on why it won't clock high?

If you can get into Windows, use CPU-Z and verify the memory speed. I wouldn't be surprised if your BIOS was showing it incorrectly.
